Tom Yam Seafood Laksa

Ingredients

For Soup:
1 stalk lemongrass
• 8 slices galangal
• 6 pieces kaffir lime leaves
• 2 chilli padi
• 1000ml chicken stock

Ingredients:
• 4 tbsp Thai chilli paste / nam prik phao
• 150g EKA LAKSA BERAS THAI, soaked till soft and cooked
• 8 medium size prawns
• 200g fish fillet
• 100g fresh oyster mushroom

Seasoning:
• 3 tbsp fish sauce
• ½ cup lime juice
• 2 tsp sugar
• 1 tsp salt

Cooking Method

    1. Bring chicken stock to boil
    2. Add in all soup ingredients and bring to boil
    3. Lower the heat and let to simmer for 10 minutes
    4. Add in sugar, salt, fish sauce and Thai chilli paste. Stir well
    5. Add in oyster mushroom, fish fillet and prawns
    6. Bring to boil till well cooked
    7. Add in lime juice
    8. Add in coriander leaves
    9. Serve hot with EKA LAKSA BERAS THAI
