Fried Vegetarian Pumpkin Rice Vermicelli


• 150g EKA FATIMA BIHUN soaked to soften, drained 1 tbsp sliced ginger
• 5 dried shiitake mushrooms, soaked, shredded
• 10g carrot, shredded
• 10g dried wood ear fungus, soaked, shredded                                                     • 200g pumpkin, peeled, shredded
• 150g cabbage, shredded

Seasoning sauce (mixed):
• 3 tbsp light soy sauce
• 1 tbsp vegetarian oyster sauce
• 1 tsp sesame oil
• ½ tsp pepper
• 200ml water

• Chopped local celery and red chili


Cooking Method

  1. Heat up oil, saute chopped ginger till fragrant.
  2. Add in mushrooms and stir-fry till aromatic.
  3. Add in carrot, wood ear fungus, pumpkin, cabbage and stir-fry till aromatic.
  4. Pour in seasoning sauce and stir well.
  5. Add in EKA FATIMA BIHUN, stir-fry till well mixed.
  6. Sprinkle local celery and red chili on top. Serve.
